How to Make Paturi Step by Step Guide

Let us learn Make Paturi! Before learning the process learn what is paturi? Paturi is basically something which is banana leaf smoked that means it can be fish, prawns, yam, lentils and even it can be chicken. But in India we like fish(speacilly hilsha and pomfret, bhetki,mourola) and also prawns or shrimps marinated with coconut and some spices(onion, garlic, mustered oil, green chili) and finally wrapped in toasted banana leaf.

It is  actually traditional Bengali dish but in goa they used coconut and onion, garlic, oil and chilies and fresh coriander and some mint, and its called “patrani machchi”. ‘patrani’ means leaf and   ‘ machchi’ means fish basically pomfret. But in kolkata paturi also can be veg, that means we used also lentils( toor dal or chana dal) and yam instead of fish, which is called “dal er paturi” and for yam its called “kochur paturi”. In veg ‘paturies’ we uses red chilli instead of green chilli for extra spiceness. Paturi is always eat with some steam rice. Here we have discussed how to make paturi.


Hilsha Paturi
Ingredients( for one people):
Hilsha fish- 1piece
Yellow mustard- 1tbsp
Black mustard- 1tbsp
Poppy seed- 1/2 tbsp
Bitten card- 1tbsp
Onion paste- 1tbsp
Garlic- 1 piece
Green chilli- 2no.
Greated coconut- 2tbsp
Termaric powder- 1/2 tbsp
Mustard oil- 2 tbsp
Salt- as per your taste
Banana leaf- 1 piece
Suger- a pinch of

Method of making paturi:

1. Make a fine paste of all the ingredients without fish.
2. Apply some mustard oil and some termaric powder and salt on fish and keep it rest for 15 min.
3. After 15 minutes marinate the fish with prepared spice paste. And rest for another 10 minutes.
4. Toast the banana leaf in open fire or on tawa or fry pan and place the piece of marinated fish with some spice paste and carefully wrap it. You can use some thread to tie it.
5. Place the parcel on a pan in medium heat for 15 minutes. In every 5 minutes must be turn over the parcel. You can use some oil to avoide burning.  Served with pipeing hot steam rice.

Mourola (Indian carplet) Paturi


Mourola fish- 5piece ( for one people)
Grated Coconut- 3tbsp( very fine paste)
Termaric powder- 1/2 tbsp
Mustard oil- 1tbsp
Salt- as per your taste
Onion paste or sliced-  one midium
Garlic- 1 piece
Green chilli- 2 no.


1. Apply termaric powder,salt, mustard oil on fish and rest for 15 minutes.
2. Paste the remaining ingredients.
3. Marinate the fishes with prepared spice paste.
4. Toast the banana leaf in open fire or on pan and place the marinated fish on the toasted banana leaf and wrap it. You can tie it with thread.
5. Place the parcel on the the pan or tawa in medium heat for 15 minutes. In every 5 minutes must be turn over the can apply some oil on tawa for avoid burning. Served with hot steam rice.
